Fresh beet salad
- 1 medium-size beets
- 1 big carrot
- 2 cups of spinach cut into strips 4 cm long
- half a cup of cleaned, crushed walnuts
- 2 tablespoons of olive oil
- 3 tablespoons apple vinegar
- 2 tablespoons of lemon juice
- 10 mint leaves
- 2 tablespoons of mustard
- pepper and salt, to taste
Peel the beetroot and brew, and then cut the carrot into thin discs. Mix, add spinach and walnuts, salt and mix well. Make a dressing from oil, vinegar, lemon juice, chopped leaves of mint, mustard, and pepper, and pour over the salad.
